Growing up, I loved eating Hot Pockets for lunch. I would say I practically lived off of them during my teenage years. There was something so amazing about throwing a frozen item into the microwave in this little sleeve and something crispy and yummy came out. Obviously as I grew older, I ate them less and less. I bought them once as an adult and I noticed they were extremely heavy in my stomach after I ate them. They were also so salty and I could taste the artificial flavors that were in it. Great for a growing adolescent, not quite as good for an adult.
But that doesn’t mean that my random Hot Pocket craving has gone away. From time to time, usually in the middle of the night when we’re watching a movie, I would turn to Chris and ask if he wanted to do a late night run to the store for Hot Pockets. He usually talks me off the cliff when I’m feeling weak. The best solution I had was to make my own with natural ingredients and less guilt.
I’m calling these puff pockets because (1) copyright and (2) I used puff pastry so they actually puff up. These puff pockets are really simple to make as it’s with all prepared ingredients. It’s ok to use prepared ingredients and put them together for a fast and simple snack/light meal. Not to mention, they taste much more natural. I wanted to give these puff pockets a more adult flavor profile so I used brie, prosciutto, and figs. It’s one of the best winning combos of flavors. I could graze on these three items all day and be totally ok with not eating a real meal. And it’s currently fig season so I would be insane not to use them. But what if you don’t have fresh figs? Fig jam is a great alternative.
I used Jamnation Can You Fig It jam in this recipe. Jamnation’s mission is very simple: they use local and organic ingredients, 50% more fruit, and 50% less sugar than other jams on the market. They pride themselves in creating jams with spices and flavor profiles that are unique.
Fig and Brie Puff Pockets
- 1 package frozen puff pastry sheets (I like to use Pepperidge Farm)
- 1 large wedge brie (at least 8 ounces)
- 1/4 pound prosciutto, thinly sliced
- Jamnation Can You Fig It?
- Figs, quartered (optional)
- 1 egg, beaten
- Sea salt (optional)
- Step 1 Follow instructions on box for thawing frozen puff pastry sheets prior to assembly.
- Step 2 Preheat oven to 400F.
- Step 3 Divide each sheet of thawed puff pastry into 6 equal rectangles, 12 rectangles total.
- Step 4 Place about 1 tablespoon of fig jam onto 6 of the rectangles.
- Step 5 Place 2-3 large slices of brie, 2-3 slices of prosciutto, and a quarter of a fig (optional) on top of the jam.
- Step 6 Dab the edges of the 6 rectangles with fillings with egg wash.
- Step 7 Gently lay the other puff pastry rectangles on top of the fillings and line up edges. Use a fork to crimp the edges.
- Step 8 Score the top of each pocket to allow air to escape.
- Step 9 Brush on egg wash, sprinkle with salt (optional), and bake for 25M.
- Step 10 Allow to cool completely before eating.
