Happy #fishfriday! [AD] Fish sticks were one of my favorite lunches growing up with a gargantuan serving of tartar sauce so why make that into a sandwich? Slather a soft French roll with tartar sauce (or remoulade, if you're a purist), layer up freshly sliced tomatoes and shredded lettuce, then pile as many @gortonsseafood fish sticks as you can! 
Work has continued to take over these past few months and I’m slowly making my way back to what I love! Long hours in the office meant lots of take-out but I’ve been stocking my freezer with @gortonsseafood. Being able to mix and match different variety of fish sticks and fish fillets with pantry staples to make quick and delicious meals at home is so crucial for me right now.

The steaks have never been higher. First post of The steaks have never been higher.  First post of 2022! I had hoped this year would start off with a bang and I think this @sunfedranch rib-eye steak Buddha bowl does the trick [AD] I'm still juggling an overwhelming amount of work from my day job and it's been hard to be consistent with cooking meals (and posting, for that matter). Making Buddha bowls is my favorite way to prepare lots of veggies ahead of time and then throw them into a bowl, top it off with protein, drizzle on homemade tahini lemon dressing, and dig in for an easy weeknight dinner.  I like keeping quality steaks in the freezer for impromptu meals. They freeze and defrost well (and also don't take up a whole lot of freezer space) and only take minutes to sear up. @sunfedranch is a great choice for all things beef. I can nutella you how excited I am for the holiday I can nutella you how excited I am for the holidays!  Tang yuan (sweet rice balls) filled with @nutella and chopped hazelnuts served in a mulled hot syrup. My favorite memories growing up all involve cooking with my mom, especially during the holidays. My parents usually made classic Chinese dishes even for western holidays. Holiday foods are intertwined with superstition in Chinese culture; puns and playful homophones give dishes symbolic meanings. My mom liked making tang yuan for family gatherings as the pronunciation is similar to the Chinese phrase that means "reunite," to convey the togetherness or gathering of family. I've been feeling very nostalgic about cooking with my mom lately and wanted to create something that combined my Chinese heritage and American culture.  Traditional tang yuan can be filled or unfilled, savory or sweet. I grew up with the sweet version filled with black sesame paste. The balls are made with glutinous rice (think texture of mochi) and the classic syrup is made from water, sugar, and ginger. For my rendition of tang yuan, I tweaked the filling and syrup to add some western holiday cheer. I mixed @nutella with chopped hazelnuts, then froze it so that it could be handled easier when forming the tang yuan. Star anise, cinnamon sticks, allspice berries, and oranges were added to the syrup base and simmered for half an hour. Still need holiday meal ideas? Consider this as your main dish!  This dish has many components but it doesn't mean everything has to be made at the same time. I personally hate needing to cook everything the day of the meal because that just means a mad dash until the finish line. I like this lobster wellington for several reasons: (1) the lobster meat comes from @lukeslobster which means I know I don't have to worry about the quality of the main ingredient at all, (2) the other components can be cooked the night before for a quick assembly, (3) I can use store bought puff pastry, and (4) it's super quick to assemble.  @lukeslobster is a Certified B Corporation which means they meet the highest standards of social and environmental performance. Homemade apple cider bourbon caramel popcorn [AD] I'm thinking of making another holiday cookie/confection box this year and been playing with the idea of a holiday popcorn. I used @connectsnacks gourmet butterfly yellow popcorn kernels for this sweet snack. This popcorn has flavors of crisp apple, sweet caramel, and hints of vanilla and oak. I always scramble to design holiday meal menus. Then I rush to cook it. It’s a whole thing. But this is why hacks exist, right? These shrimp canapés can be made in under 30 minutes with some help from @gortonsseafood. Check out the link in my profile for the recipe.  I love serving canapés because they’re fancy but easy. Canapé is French for “small appetizer served on bread.” They’re served during cocktail hour so they’re typically salty/savory (cough, so you can drink more). Canapés are very decorative by layering a carb base, some sort of creamy spread, the main item, and a garnish on top. Pro tip: serve small starter bites for arriving guests to nibble on and buy yourself some more cooking time!  For that star canapé ingredient, I use @gortonsseafood beer battered shrimp for that lighter, crisper texture. The key is the beer. Beer is carbonated which makes it more acidic. The acidity stops gluten from forming to yield a lighter batter - similar to Japanese tempura batter. Plus, they're the perfect single bite size. Some only dream of cake. Others bake it happen. F Some only dream of cake. Others bake it happen.  Fluffy and tender sponge cake layered with fresh strawberries, lightly sweetened fresh cream, and crème patisserie. Topped with chocolate rolled wafer cookies, more fresh strawberries, and Kirby! What does strawberry cake have to do with this beloved video game character? Firstly, because strawberry cake is Kirby’s favorite. And secondly, because this weekend on November 13-14, Alex Does Games Quickly!  For the last eight years, my friend Alex hosts an annual 24-hour charity video game speedrun marathon for sick and injured kids in need. Alex has raised over $30,000 for these kids and he has no plans to stop. Alex completes 35+ different speedruns at 1.75x world record pace or better - basically means he beats 35 different games really really really fast from start to finish. 100% of all donations go to benefit the kids at @seattlechildrens hospital.  Donators choose the games that Alex plays. Katamari is my personal favorite to watch. Alex has been training the last three months to prepare for this event and we’re down to the final week of prep. My husband has supported Alex from the beginning as the behind-the-scenes hype man and I’ve contributed the donation prize this year (set of three amigurumi Star Wars Ewok, R2D2, and C3PO).
