Weekend brunch is, and always will be, a mandatory part of my life. @gortonsseafood helps put a different spin on it [#AD] Chris makes breakfast and coffee every weekday since we've been working from home. He really looks forward to weekends when we order brunch take out. It’s one of the small joys in his life to eat a brunch prepared by someone else. I don't always love take out because the food steams itself - eggs and toast don't stand a chance by the time they get to us. That's why I prepped a lemon herb fish quiche so we always have brunch at home!

I make my own rough pastry because I love the flaky tender crust. But a store bought pie crust works equally well. Top it off with @gortonsseafood Lemon Herb fish fillets and you have a tasty start to the day! Recipe posted on blog now. Link is in my profile!

Most people think quiche originates from France. But it technically came from Germany! The word quiche comes from the German word for cake, “Kuchen.” The region where quiche came from was under German-rule at that time (the European borders have changed quite a lot throughout history). The use of egg and cream in pastries dates back to as early as the 13th century. It's a popular pastry consumed through Europe these days but didn't gain popularity in the US until the 80s.

The freckled strawberry yogurt bar was my absolute favorite as it was packed with real strawberries. I'm loving this explosion of 90s nostalgia! It's so much fun seeing everything I grew up with coming back in style (maybe not the razor thin eyebrows though, please don't come back). This 90s revival has definitely made me nostalgic for some of my favorite snacks. I used to grab a Hostess Ho Hos to snack on after school. I would pick off the chocolate coating and then unfurl the cake. Clearly, playing with my food is something I never grew out of. But I have definitely grown out of super sugary treats. The best way to satisfy this craving is to make it my own homemade chocolate swiss rolls.

Swapping out flour for protein powder is a good way to sneak in some extra protein. Protein powder can be used in so many different applications than just shakes. It’s such a versatile ingredient to use in baking. Different protein powders have different ratios of ingredients so always test it out first! Just remember that protein powder is not a 1:1 substitute for flour. I recommend starting off by swapping 1/4 cup of protein powder for every 1 cup of flour until you reach the consistency you're going for.

Cheesecake, but make it love ❤️ Look at how cute these mini lemon and strawberry cheesecake are! The husband is picky when it comes to cheesecake but he definitely loves these. I add loads of fresh lemon juice and lemon zest for that extra pucker effect (kissy face, anyone?). It really helps lighten up the whole cake. But where's the strawberry? In those little hearts! I combine frozen strawberry powder to a bit of the batter and pipe out shapes.

The husband and I don't really celebrate Valentine's Day but we like using it as an excuse to eat. I made this beet and brie tart a few months ago and the husband thought it looked celebratory and advised that I post it this week - good idea! I always keep puff pastry in the freezer as it's one of the simplest ways to throw together a meal with anything you have. If you want to fancy-fy any dish, try to slice it thin and roll them into roses. I use this trick to upscale desserts and toasts. Another trick? Finish off your food with a healthy pinch of quality sea salt for added burst of flavor and crunch.

Puff pastry is a laminated dough made of layers of thin layers of lean dough and butter. It's flakey and light because of these layers. Commercial butter contains about 15-18% water. As the butter melts and the water evaporates, it creates steam between the dough layers which in turn create the gaps that make it flakey. Making puff pastry from home is time consuming and slightly daunting. My butter would get too soft and gush out the sides when I would roll it. I learned to keep the butter as cold as possible by throwing it into the fridge every every few folds/rolling. I also start off by making the butter block ahead of time and popping it into the fridge to get it as hard as possible and thawing in the fridge slightly before use. While it's worth the effort to make it at home, I find the frozen puff pastry equally as good and delicious.

Honestly, I'm just here for the halftime show. Bring on the snacks! I have a bad habit of stuffing my fridge and pantry full and coincidentally had all the ingredients needed for Korean hot dogs. They're the best crispy finger food that I can mindlessly munch on while keeping my eyes glued to the TV. The batter is made from flour, milk, egg, sugar, salt, and baking powder. Hot dogs and string cheese sticks were stuck on some skewers. Typically, french fries or panko are used as the coating but I used the corn flakes in the pantry which the husband prefers. Then they’re slathered with ketchup and @kewpieusa.

What's the difference between American corn dogs and Korean corn dogs? The dough, for sure. American corn dogs are made with cornmeal giving it a crunchy, crispy exterior. Also, there tends to be a sweeter taste. Korean corn dogs have a soft, fluffy exterior. Anyone else feel like January dragged on longer than necessary? Good; wasn't just me. I'm (cautiously) excited February is finally here and we can keep 2021 moving along. The last month has been super busy for me and the husband so we've been surviving on meal prep to get us through. My favorite meal prep is copious amounts of dumplings. I can mindlessly pleat dumplings as I watch a movie and they freeze so well. Pork dumplings with chives are a staple in my household drizzled with hot chili oil.

Chinese New Year is coming up and I would highly recommend making your own dumplings to celebrate! Dumplings are a traditional food during CNY because they resemble little gold nuggets. Soup is needed for the upcoming Bay Area weather we're expecting: high winds (already here), lower temperatures in the 50s, and lots of rain. I love rain season, especially when snuggled up with a piping hot bowl of soup. My mom used to keep the frozen french onion soups stocked up for quick and easy meals and I had a sudden nostalgic craving for it. It was worth all the tears shed during onion cutting for this.

The husband has been trying to keep me sane these past few months by planning "adventures," aka running errands and picking up boba, any excuse to get in a car and drive somewhere. While he says he loves both, I can tell Chris has an affinity towards yeasted doughnuts over old-fashioned. I’ve featured some old-fashioned doughnuts on my blog before and I honestly like making those more because there’s no yeast involved. Hence, no proofing time. Just cut and go. Old-fashioned doughnuts, sometimes called cake doughnuts, are typically a bit denser and crumbly. The surface is craggy and creates those amazing super crunchy bits. There’s usually a bit of a tang as they’re often made with sour cream. They can be served glazed or plain and tend to be less sweet than their yeasted friends. Yeast doughnuts, on the other hand, are very airy and light. Because of the proofing, the texture becomes almost chewy and pillowy. These are the types of doughnuts that are typically filled with jams or custards and glazed. Think Krispy Kreme as they’re the most iconic yeast doughnuts we have in these parts. I'm trying to make better food choices like many others in the new year and made cashew energy balls to curb those sweet tooth cravings.
