I don’t know about you, but I love eating my pancakes with bacon and blueberries. Nothing beats the flavor combo of a little sweet with a little savory. Phoros Nutrition sent their Protein Pancake and Waffle Mix for me to try. This mix is high in protein and low in carbs so it’s perfect for those working towards their goal weight! It contains 30 grams of protein, 19 grams of carbs, and 2 grams of sugar per serving. These nutritional facts definitely made me feel less guilty about topping my pancakes with bacon. As someone who prefers a bit of tartness to brighten up the palate, I made a gorgeous blueberry compote to go on top of the stack instead of using maple syrup.
The Phoros Nutrition Protein Pancake and Waffle Mix is really easy to put together. Simply mix a scoop of powder (scoop included in bag) with 1/2 cup of liquid (water, milk, almond milk) and you have your mixture made! Did I mention this pancake mix can be used to make waffles too? Just add an egg to the mixture and you have waffle batter. So simple and easy; not to mention packed with loads of protein to kick-start the day.
- 2 1/2 cup fresh blueberries
- 2 tablespoons water
- 1/4 cup sugar
- Zest from one lemon
- 1 tablespoon fresh lemon juice
- Pinch of salt
- Step 1 In a medium saucepan, add 1 1/2 cups blueberries, water, sugar, lemon zest, and salt.
- Step 2 Cook mixture over medium heat for 10 minutes.
- Step 3 Add the remaining blueberries and lemon juice and cook another 10 minutes.
